Conceived by acclaimed designer Atelier Zébulon Perron and chef Marcus Samuelsson, this multicultural restaurant celebrates the harmonious blend of diverse cultural influences. C hef Samuelsson, an Ethiopian-born, Swedish-raised chef, brings together African, Scandinavian, and American flavours in a bold culinary narrative that echoes his life story. partnership for the Marcus Restaurant at Montreal’s Four Seasons Hotel set a high bar, and Hav & Mar builds on that foundation. Together, they envisioned an interior that goes beyond mere aesthetics to foster social connection, bringing people together in a warm, inviting space.
The restaurant’s name, Hav & Mar – derived from the Swedish word for “sea” and the Amharic word for “honey” – captures this blend, promising a dining experience rooted in both tradition and exploration. Since its opening in late 2022, Hav & Mar has quickly gained a reputation for its globally inspired menu, vibrant with festive and rich flavours. A reimagined collaboration This isn’t the first time Samuelsson and Atelier Zébulon Perron have collaborated. Their previous
